Pura Vida Miami is expanding its all-day dining menu with the introduction of premium 100% grass-fed and grass-finished sirloin steak, marking the wellness café brand's latest step in offering guests more high-protein dining options.
The new steak offering became available June 3 at participating Pura Vida locations nationwide, adding a protein-forward option designed to complement the brand's fresh, wellness-focused menu while appealing to guests seeking more substantial meals throughout the day.
Founded on a philosophy of thoughtful sourcing and elevated café dining, Pura Vida said its newest menu addition features steak sourced from grass-fed cattle farms known for producing high-quality beef. The sirloin is marinated in a proprietary seed oil-free seasoning blend, charbroiled and finished using sous vide cooking to create a lean yet flavorful entrée.
"Our new grass-fed steak launch represents an exciting milestone for the brand, as it allows us to deliver the high-quality protein our guests are looking for while staying true to the fresh, energizing experience that defines Pura Vida," said Omer Horev, co-founder and chief executive officer of Pura Vida Miami. "We wanted to reimagine steak through our lens: bright, vibrant, approachable and made for everyday life."
Leading the launch is the new Sunset Steak Bowl, featuring medium-cooked grass-fed sirloin served with cilantro jasmine rice, arugula, avocado, corn salsa, roasted sweet peppers, fresh cilantro and the company's signature house-made chimichurri crafted with extra virgin olive oil and fresh herbs. According to the company, the entrée provides 33 grams of protein and 8 grams of fiber.
The chimichurri serves as the centerpiece of the new menu lineup, complementing the steak while reinforcing the café's coastal-inspired approach to fresh, vibrant flavors.
In addition to the Sunset Steak Bowl, guests can customize several existing menu items with the new protein offering. The Grass-Fed Steak Plate allows diners to substitute or add steak to the brand's signature plate selections, providing 37 grams of protein, with options to double servings or combine proteins. Guests also may add steak to any salad or bowl as an additional protein option.
John Suarez, Pura Vida Miami's vice president of culinary, said the development process focused heavily on sourcing standards and product quality.
"Ensuring that we were able to work with a farm that could provide the highest quality, certified humane raised and handled grass-fed beef was of the utmost importance to us," Suarez said. "Our guests deserve not only a chef-driven meal, but the knowledge that our team went to great lengths to deliver the best quality product possible."
The company views the launch as more than a menu addition, positioning steak as a strategic expansion into late-afternoon and evening dining while maintaining its emphasis on health-conscious ingredients and approachable cuisine. The new offerings are designed to appeal to both loyal guests and new customers seeking premium protein options in a casual café setting.
Express Pura Vida Miami locations with limited menus will not offer the new steak selections.
Founded in 2012 by husband-and-wife team Omer and Jennifer Horev, Pura Vida Miami has grown from a single café in Miami Beach to more than 50 locations across Florida, New York, California, Maryland, Virginia and New Jersey. The lifestyle café brand is known for its menu of avocado toasts, pasture-raised egg dishes, salads, wraps, bowls, smoothies, cold-pressed juices and other wellness-focused offerings served in a hospitality-driven environment designed to encourage community and connection.
