The new restaurant, created by the team behind Sails Restaurant and Butcher Private, centers on a chef-driven tasting journey shaped by precision and respect for craft.

Tucked discreetly along Fifth Avenue South, Omasava was designed as a sanctuary for diners seeking an elevated and intimate culinary encounter. The space features a chef’s counter carved from fossilized oak dating back to 1,000 B.C., offering guests a rare front-row view into the discipline and care behind each course. Overhead, a ceiling constructed from vintage Champagne bottles bathes the room in a warm, ambient glow, setting the tone for an experience that is both timeless and reimagined.
The Experience
Omasava’s omakase unfolds without menus—only trust. Each evening’s tasting reflects the rhythm of the season and the chef’s mastery, presented through dishes that honor Japanese tradition while embracing refined, modern composition. Ingredients are sourced locally and from Tokyo’s renowned market, arriving at dawn before being transformed into plates that balance purity, restraint and expression.
The restaurant offers two nightly seatings, at 5:30 p.m. and 8 p.m., each lasting approximately two hours. The experience is priced at $298 per guest, plus tax, service charge and beverages. Guests may choose from an award-winning wine list, curated sake selections, craft cocktails or a refined tea pairing.

Omasava’s interior mirrors its culinary philosophy—rooted in craft and intention. The room incorporates stone, oak and leather, softened by warm lighting to create an atmosphere that elevates conversation and highlights the artistry both within the space and on the plate.
Private Experiences
For celebrations and milestone gatherings, Omasava features a fully private 360-degree wine cellar omakase room accommodating up to 17 guests. The space is designed to offer the same chef-guided immersion in a secluded, elevated setting.
